Don't get us wrong, we love potatoes and every potato version of fries as the next person, but it's fun to flip the switch! It's a great way to get kids (adults too) to eat their veggies. Simple and easy ingredients to make a delicious and nutritious side dish.
NOTE: This recipe is all about carrots, but you can also substitute different veggies like zucchini, broccoli, green beans, asparagus, potatoes, or sweet potatoes. Different veggies will have different nutrient and calorie makeups.
1/4 cup Parmesan cheese
1/8 GF panko
2 tbsp olive oil
Seasonings: garlic, salt, parsley, pepper, Italian seasonings
Greek yogurt (plain)
Cooking Note: Aim to cut veggies into as equal parts as possible (same size), this will ensure more even cooking and cook times.
