This is a great meal to prep in advance. Pre-cook the chicken, roast the zucchini, and just make sure to have everything else on hand for an easy grab and go meal. When you are ready to eat grab the necessary ingredients and assemble! If the chicken and zucchini are pre-cooked, this recipe should only take 5 minutes to put together, leading to a simple and easy lunch or dinner. It just so happens to also be delicious and nutritious!
Here's What You'll Need:
Wrap: For the wrap, you can use any that fits your needs. For this recipe, a gluten free wrap was used. You will want a medium to large wrap to fit all the goods in.
Chicken thighs: Can use chicken breast, chicken tenders, or another protein source. Season to your liking with onion powder, garlic, oregano, and salt and pepper to taste.
Greek Dressing: You can also use a blend of olive oil, red wine vinegar, and oregano.
Spinach: Could also use lettuce of choice or another leafy green.
Optional: Try diced red onions and or kalamata olives.
