Let's Chat: Versatility!
This recipe is 100% customizable! You can add any add-ins of your choosing! Try various proteins, veggies, herbs, and seasonings. For this recipe, we made a big batch of the same add-ins so we mixed everything together in one bowl first, then poured it into the muffin tins. You could first just mix the eggs and quinoa together in a bowl, pour into muffin tins, then mix and match add-ins for a variety of flavors. You can also omit the quinoa for a lower-carb breakfast/brunch option if desired, or even do a complete egg white muffin for a lower fat content. Everything is totally up to you and your taste buds! Once everything is prepped breakfast is served in just 15 minutes!
Here are a few combos we also love!
Bacon and spinach
Tomato and spinach
Ham and broccoli
3 cheese
Sausage and mushroom
And the list continues!
Tips to the Perfect Quinoa Egg Muffin
Make sure to grease your muffin tins! Or use cupcake liners to help prevent sticking. There's a 99.9999% chance the eggs will stick to the muffin tin walls if not greased well enough.
Use a small spatula to help loosen the eggs from the muffin tin walls if sticking occurs.
Only need to fill muffin tins to 3/4 full, eggs will rise to fill the entire muffin tin.
Store in the fridge for up to 5 days. When ready to eat just microwave for about 15 to 20 seconds and enjoy!
You can also put them in the freezer for up to 2 months.
