Mint Chocolate Chip Cookies

Get the Cookies Ready for Santa!

Indulging is a part of life! These cookies are going to want to be on your indulging days for sure. If you weren’t already in the Christmas spirit, biting into these cookies is like taking a bite straight out of Christmas.



Grocery List

  • 1 cup of butter, softened

  • 1 ½ cups of sugar

  • 2 large eggs

  • 1 egg yolk

  • 1 teaspoon of peppermint extract (or more to taste)

  • Approximately 10 drops of green food coloring (gel food coloring works really well too!)

  • 3 ¼ cup of all-purpose flour, spooned and levels

  • 2 teaspoons baking powder

  • 1 teaspoon cream of tartar

  • ½ teaspoon kosher salt

  • 12 ounces of dark chocolate chips, divided

* This makes about 20 large cookies!*


Instructions

  1. Preheat the oven to 350 degrees F. Line one or more baking sheets with parchment paper.

  2. In a large bowl or stand mixer, beat the butter and sugar together. Scrape the sides and bottom of the bowl, then beat on medium for about 2 minutes, or until light and fluffy.

  3. Add the eggs and yolk, peppermint extract, and food coloring. Mix thoroughly.

  4. In a separate bowl, combine flour, baking powder, baking soda, cream of tartar, and salt. Add to the wet ingredients and combine until the flour is not quite incorporated.

  5. Add half of the chocolate chips to the dough. Later after the cookies are baked you can use the rest to push onto the tops of the finished cookies.

  6. Use a ¼ cup to form balls of dough and shape them into a long oval shape. Think egg shape rather than a ball form. Place them on the cookie sheet lined with parchment paper the tall way. These cookies are large, about 8 per sheet works well.

  7. Bake at 350F for about 8-10 minutes or until barely starting to brown on the edges. The centers should mostly be not shiny when you take them out. A small amount of shine is ok.

  8. Let cool for 5 minutes on the pan then remove and enjoy! NOTE: while the cookies are still hot, you are welcome to put more dark chocolate chips on the tops to melt!
