Greek Feta Cauliflower Gnocchi

Linked Fit is Still on the Trader Joe's Cauliflower Gnocchi Kick!

What has all the hype been with cauliflower gnocchi?

  • Well for starters it's gluten free and vegan! It contains no wheat, eggs, or dairy products. Additionally, it works with other dietary choices like Whole30.

  • Whether it's for dietary needs or to change things up, cauliflower gnocchi makes a great alternative or substitute for regular potato gnocchi.

  • It has simple ingredients! It's made of 75% cauliflower (according to Trader Joe's), as well as cassava flour, potato starch, extra virgin olive oil, and sea salt.

  • Being derived from vegetable, cauliflower gnocchi does contain fiber.

  • Cauliflower gnocchi is extremely versatile. It can be combined with a variety of sauces and seasonings!

  • Besides cauliflower gnocchi, cauliflower alternatives have been on the rise when it comes to food trends. Another hot note has been cauliflower pizza crust.

Directions:

  1. Pan-fry: This is one of the first ways the package says how to prep the gnocchi. Pan fry with olive oil for about 5-6 minutes. The package claims it will leave the gnocchi crisp on the outside and soft on the inside. Sounds amazing right? Well, that's not exactly what happens. This method left the gnocchi soft mushy with a gummy texture.

  2. Boil: The second method of prepping the gnocchi. This method involved bringing a saucepan with 4 quarts of water to a boil. Once the water is boiled add the gnocchi, cooking 3-6 minutes or until the gnocchi floats to the top of the water. This method was better than the pan-frying but still left the gnocchi gummy.

  3. Microwave: The third and final method listed. Placing gnocchi into a microwave save container, cover, and cook 5-6 minutes or until the gnocchi is heated through. This method was most similar to the boiling method. Again, leaving the gnocchi gummy. This method does work well when on a time crunch!

  4. Baking: When the above the methods didn't turn out as expected we tried one more way, baking! Preheated the over to 425 degrees F. While the oven is preheating place the gnocchi on a lined baking sheet. Nonstick spray does help to prevent sticking, but not necessary. Bake for 15-20 minutes. This has been the method cooking method we have all been waiting for! The gnocchi had a crisp golden brown outer edge with a soft non-gummy inside. Absolutely delicious! I highly recommend ditching the listed methods and go right to this one!
