Burrito Bowls

Who else loves Chipotle?


If you love Chipotle or another restaurant's burrito bowls, then this recipe is going to be a staple lunch and dinner option for you!


This burrito bowl is easy to put together and is great for meal prepping. It's also a great way to work on various nourish habits like cooking more at home, calorie control, or something similar. This recipe is 100% customizable to your likes and the add-in options are really endless! If you are meal prepping have fun by mixing and matching different add-ins. Keep reading to learn how to make your favorite burrito bowl, plus get the recipes for guacamole, cilantro lime rice, taco seasoning, and fajita veggies!


Burrito Bowl Add-Ins:

  • Raw red onions

  • Sauteed peppers (and or onions, fajita mix)

  • Avocado or guacamole

  • Black beans

  • Pinto beans or refried beans

  • Shredded cheese

  • Tomatoes, salsa, or pico de gallo

  • Corn

  • Sour cream

  • Lettuce

  • Rice (long or medium grain) or cilantro lime rice

    • Can substitute riced cauliflower or do a 50/50 mix of rice and riced cauliflower

  • Protein of choice

  • Taco seasoning

    • Season protein of choice

  • Lime

  • Cilantro



Home Made Taco Seasoning:

  • 1 tbsp chili powder

  • 1/2 tsp garlic powder

  • 1/4 tsp onion powder

  • A pinch of red pepper or 1/4 tsp red pepper flakes

  • 1/4 tsp dried oregano

  • 1/2 tsp paprika

  • 1 tsp ground cumin

  • 1 tsp salt

  1. Mix together


Home Made Guacamole:

  • 2 to 3 mashed avocados

  • 1 lime juice

  • 1 tsp salt

  • 1/4 cup diced onion

  • 3 tbsp chopped cilantro

  • 2 diced roma tomatoes

  • 2 minced garlic cloves

  • 1 diced jalapeno pepper, seeds removed (optional)

  1. Mix together



Home Made Cilantro Rice:

  • 1 cup medium or long grain rice

  • 2 cups water

  • 2 tbsp olive oil

  • 1 minced garlic clove

  • 1 tsp salt

  • 2 tbsp lime juice

  • 1/2 cup chopped cilantro

  1. Toast rice with olive oil and garlic

  2. Add water and salt, boil to a boil then reduce to a simmer

  3. Simmer until water is almost absorbed turn heat off then let rest (check rice cooking package for times)

  4. Fluff with a fork

  5. Add lime juice, cilantro, and mix



Home Made Fajita Veggies:

  • 2 tbsp olive oil

  • 1 to 2 sliced bell peppers

  • 1 sliced onion

  • 1 minced garlic clove

  • A pinch of homemade taco seasoning

  1. Saute over medium heat until tender


Assemble!
